- Preheat the oven to 200°C (180°C fan) or Gas Mark 6. While it heats, pat the chicken legs dry with kitchen paper. This step is crucial for getting a golden, crispy skin—wet skin will steam rather than brown. You should hear a faint sizzle if you hold a leg near the hot oven rack.
- Make the marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, oregano, paprika, cumin, and thyme. The mixture should smell incredibly fragrant and look like a loose, golden paste. Give it a taste—it should be bright and punchy.
- Coat the chicken: Place the chicken legs in a large mixing bowl and pour the marinade over them. Use your hands to massage the marinade into every crevice, ensuring each leg is fully coated. The chicken should look glossy and smell of lemon and garlic. Let it sit at room temperature for 15 minutes while the oven finishes preheating (or refrigerate for longer—see tips below).
- Arrange on a tray: Line a large baking tray with baking paper or foil for even easier cleanup. Place the chicken legs skin-side up in a single layer, ensuring they are not touching. If they are crowded, they will steam instead of roast, and you will miss that lovely browned skin. The tray should look full but not jam-packed.
- Bake for 30 minutes: Slide the tray into the oven and bake for 30 minutes. At this point, the kitchen will smell heavenly—like a cosy Mediterranean taverna. The chicken should be golden and the edges of the skin starting to crisp. You will see the juices bubbling around the legs.
- Finish under the grill: Turn the oven to the grill/broiler setting (or increase the temperature to 220°C). Grill the chicken legs for a final 8–10 minutes. Watch closely—the skin will bubble and darken to a deep, crackling gold. You will hear it pop and sizzle. Remove when the skin is blistered in spots and the internal temperature of the thickest part reads 75°C.
